Happy Man!

Preparing a good meal for your family is one of the biggest pleasures a wife and Mom can have. But with prices continuing to climb, preparing big meals is becoming increasingly harder to do. This section of Pisgah Mountain Life is not calorie conscious, and little regard has been paid to saturated fats or lowering ones cholesterol. There’s plenty of resources on the internet for recipes tailored to specific health requirements – this isn’t one of those!

I’m posting very inexpensive recipes that feed at least 4 – sometimes more. I’ve included common household replacements in the recipes – such as a spoon of mayo in exchange for an egg. Sometimes we may not have everything on hand – and a quick substitution is in order! Being Southern, you’ll likely notice we have quite a sweet tooth, consume way too much red meat, and fry just dern near everything. Enjoy!
